Shop Vac HEPA filters
The best way to control dust and to keep what goes into the vacuum - in the vacuum, is to use a HEPA filter. Typically you will "pre-filter" by using a collection bag. Collection bags are rated and will catch all the bigger debris, while the ultra fine dust travels through to be caught downstream by the HEPA filter.
Why not just use the HEPA filter only?
If you were to use the HEPA filter without a collection bag, you will run into problems with the HEPA filter getting clogged up. The purpose of the collection bag is to catch the majority of the debris - while still allowing air to pass through it. Only the finest of dust passes through the collection bag to get caught by the HEPA filter downstream. This keeps the HEPA filter from getting clogged and the vacuum losing suction.

Drywall Dust Cleanup
You can use a shop vacuum for picking up drywall dust collection IF it is properly filtered. If you don’t filter the vacuum right, the dust will blow out the exhaust back into the air. Fine drywall dust should be collected into a dust bag made for fine dust. This bag will attached to hose entry into the vacuum canister of most shop vacuums. Shop Vac brand, makes collection bags for their vacuums in different grades and sizes. You should always use a HEPA cartridge filter as a final filter to catch the very finest of dust that might escape the collection bag.
Drywall dust collection bags
Shop Vac makes a yellow colored collection bag that is specifically for drywall dust. See Fine Dust Bags
HEPA cartridge filter
Shop Vac makes a wet version which can be used for wet pick up or dry pick up, and a dry pick up version for dry only pick up.
Drywall Sanding Attachment
You can eliminate the drywall dust right at the source and point of creation by using a vacuum sanding attachment which will allow the drywall dust to be vacuumed directly from the wall into the (properly filtered - as defined above) shop vacuum. See Vacuum Drywall Sanding Attachments
